Apple Ring Pancakes

Your basic pancakes just got an upgrade. Sliced apples are dipped in a cinnamon-infused pancake batter, griddled until golden brown, and served warm…maple syrup required.

Ingredients:

  • 1 batch prepared pancake mix 

  • sprinkle of cinnamon

  • dash of vanilla extract

  • 4 medium-sized apples

  • butter or olive oil

  • maple syrup

Instructions:

Slice apples crosswise into ¼ inch rounds, and cut out the core with a spoon or knife. Shake some cinnamon into your prepared pancake mix, and add a splash of vanilla, mixing to combine. Get your stove going by lightly oiling a griddle set over medium heat. 

Dip apple rings into batter, turning over to coat entirely. Place on hot griddle and cook until golden brown, flipping once you see bubbles appear on the surface. Serve warm with a pat of butter and maple syrup.
