Campfire Dutch Baby

Give your usual pancakes the morning off and get that fire going! This Dutch baby cooks up in just 10 minutes and is the perfect vehicle for whatever toppings you have lying around.

Serving Size: 2 as a main, 4 as a side

Ingredients:

  • 3 large eggs, at room temperature

  • ½ cup whole milk

  • ½ cup all-purpose flour

  • 1 tbsp. sugar

  • ¼ tsp. salt

  • 1 tsp. vanilla extract

  • 4 tbsp. unsalted butter

  • mixed berries + powdered sugar for topping

Instructions:

Start your campfire about an hour ahead of when you plan to have breakfast, allowing the fire to burn down to white hot coals. (Or just light up some charcoal in a charcoal chimney!)

Whisk eggs in a large mixing bowl. Add milk, flour, sugar, salt, and vanilla, mixing until smooth.

Set 10-inch Dutch oven over a small bed of coals. Melt butter in the Dutch oven, then pour in your batter. Cover with the lid, then pile on hot coals.

Cook for 10-15 minutes. The Dutch baby should puff up dramatically and look golden brown. Remove from the heat and serve immediately with berries and powdered sugar!
